新聞來源: Business Next 數位時代 iCHEF攜手森邦集團、服務科學專家,切入餐廳資料大數據分析 撰文者:郭芝榕 發表日期:2016/05/27 想像餐廳有一個「奶茶預測系統」,可以建議你在什麼時候、什麼樣的客人組合,奶茶會賣得最好!這不再是夢想。智慧POS新創iCHEF,跟擁有拉亞漢堡品牌的森邦集團、清大服務科學研究所及微軟Azure攜手合作,切入餐廳資料大數據分析。 iCHEF從2月開始與10家森邦集團旗下新品牌「堤諾比薩Tino's Pizza Café」直營門市合作,預計7月會對外分享大數據導入成果,最終希望把大數據科技普及至上千家中小型餐廳,將餐廳顧客的用餐行為「潛規則」,全部雲端自動化,讓小餐廳也可以很容易了解消費者的消費模式,進而設計出最適合消費者用餐習慣的菜單。 iCHEF共同創辦人暨行銷長程開佑指出,目前只有大公司有能力做大數據分析,是時代讓小餐廳也擁有大數據分析的能力了。然而,大數據分析除了有餐廳資料之外,更需要深入研究餐廳產業的知識和消費者行為,才能分析出最有洞察力的結果。 iCHEF投入研發經費到清大服務科學研究所中,由森邦集團的堤諾比薩授權餐廳資料,大數據專家也會到場實地研究消費者行為,再運用微軟的大數據分析平台做分析,洞察發現將無償提供給堤諾比薩的加盟主,創造四贏結果。 iCHEF與森邦集團、清大服務科學研究所、微軟Azure合作開發餐廳大數據。 圖片來源:郭芝榕攝影。 森邦集團旗下有600多家門市,為什麼從堤諾比蕯先開始? 森邦集團總經理特助徐沛源說,「如果現在不做,以後就會有其他人做!」從堤諾比蕯開始,因為它是兩年的新品牌,已經擴張到中國、東南亞市場,型態也很適合桌邊點餐,希望可以提升加盟主的科技力。6月前會開4家以上,下半年再開4至5家加盟店,現有的加盟店再轉換成新的系統,預計年底前會有15至20家門市導入這個大數據專案計畫,並在接下來兩年內積極拓展東協與東亞市場。 大數據不是很多資料,而是豐富的資料 台灣微軟雲端事業開發副總經理周旺墩說,以前在決定電腦規則時是寫程式,但是資料本身有相關性,一定比例下它就會發生什麼。市場最有興趣的是預測,什麼事情即將發生?例如天氣改變,備料就要改變。有了歷史資料就可以預測並產生模型,可以自動調整模型的參數和關連時,就可以發現未來,得到趨近行為的結果,可以應用在很多地方。 周旺墩指出,過去連鎖大公司才能做大的運算,知道什麼客群的貢獻最高,但不是每家餐飲業都可以做得到。分析客單價時可能會發現有趣的現象,例如只要有人點麻辣類的產品,客單價會提高。數據可以把資料和經驗轉成每個人都可得到的經驗,找出標準化的服務,並做出客戶喜歡的東西。 清華大學服務科技與管理中心主任徐茉莉(Galit Shmueli)說,「大數據在全世界都是個流行語,台灣對大數據的認知還在很早期的階段,重是要真的創造出資料的價值,我們會先從問問題開始,才知道商業機會在哪裡。」 她進一步指出,建立專業領域的大數據分析模型並不容易,會先導入餐廳資料、交易資料、政府開放資料中的天氣、旅客、旅遊地點、捷運交通資訊等等,透過機器學習演算法慢慢探索和修正,才能找出有用的關聯性。「如果我們發現餐廳賣出很多咖啡,跟它開門的時間有關的話,就可以建議其他餐廳。」 清大服務科學研究所助理教授雷松亞(Soumya Ray)指出,「大數據不是很多資料,它是很豐富的資料。包括我們週日要賣多少?這跟下雨、冷、很多韓國旅客可能都有關係。」假設一家餐廳一天來客數是150到200人,一個月約3000筆資料,3個月有1萬筆交易,就大約會有4萬筆的資料點。這是累積起來的微小資料,這跟每個行為動作有關,這一秒他坐在這裡,用這個信用卡付費都有很多關連。 建立台灣大數據生態體系 對iCHEF來說,這筆投資也是值得的,可以擴張新的商業模式。把從堤諾比薩發現的「潛規則公式」放在iCHEF POS平台上訓練,開發出多種新功能,提供給使用iCHEF POS App的餐廳付費使用。這一方面可以幫助iCHEF的B2B軟體服務更加平台化,更能把這個模式擴張至東南亞及日本等海外市場。5月中也剛拿到科技部補助166萬元研究經費,將全數投入清大服務科學研究。 程開佑說,「iCHEF先拋磗引玉,希望讓台灣變成全世界大數據的研發中心!」台灣服務業很大,但是大部分都是小事業,沒有能力使用大數據、分析資料等科技。如果沒人投入經費做研究的話,也發展不出新的商業模式,隨著更多人投入及投資大數據研究,研究單位也培力一群資料科學和服務科學的人才,創造新的事業,然後得到投資,有了正向循環,才能建立新的大數據生態體系。 新聞連結 News Link「小餐廳大資料」專案宣布啟動 森邦新品牌「 堤諾比薩 Café 」將率先導入 2016.3.11 <台北訊> 年度餐飲業重頭戲『國際春季連鎖加盟展』在 3 月 11日於台北世貿開展,而擁有『拉亞漢堡』等品牌與超過600家門市的森邦集團,於其攤位上與台灣微軟、國立清華大學服務科學研究所、以及新創公司 iCHEF 共同宣佈啟動全球第一個針對餐飲加盟品牌進行的大資料研究專案『 小餐廳大資料 』,並由其新品牌『 Tino’s 』將使用 iCHEF POS App並成為全球第一個讓加盟主獲得大資料科技優勢的餐廳加盟品牌。 <Taipei> The highlight of Taiwan’s catering industry, Taipei Int'l Chain & Franchise Spring Exhibition, launched on March 11. Once the correlation is found and validated, the app can automatically alarm servers to serve at the right moment and thereby easily maximize restaurant revenue. “Though we are in the 21st century, compared with the last century, there is no difference to our understanding of restaurant management. Big data technology brings more opportunities,” Ken Chen, cofounder of iCHEF, said. “With the aid of the research team, we will find out more hidden rules in running restaurant businesses.
